since 2020, I have been intensively engaged with matcha and regularly inform myself about its origin, quality, and health benefits. Even with my first cup of 100% pure matcha in a café, I was thrilled by its unique taste.
Since then, matcha has become an integral part of my daily morning routine.
Based on my personal experiences, I would like to share my knowledge and enthusiasm for matcha with my customers and all interested parties. Therefore, I would like to introduce you to some information about high-quality Japanese matcha and its origins.
Among the most famous and renowned matcha-growing regions in Japan are Uji in the Kyoto region, Yame in Fukuoka Prefecture, and Shizuoka. After trying matcha from various regions, I am personally most convinced by matcha from Uji. In my opinion, it is characterized by a particularly balanced flavor and excellent quality.
High-quality matcha is recognized by its bright emerald green color, its fresh aroma reminiscent of grass and seaweed, its slightly sweet yet pleasantly bitter aftertaste, and its fine, velvety texture.
The different quality levels of Matcha
Basically, Matcha can be divided into different quality categories:
1. Ceremonial Matcha (Ceremonial Grade)
This highest quality level is usually made from the tenderest tea leaves of the first harvest of the year. Ceremonial matcha is particularly suitable for traditional tea enjoyment, for example as Usucha (thin matcha) or Koicha (thick matcha), which are prepared exclusively with hot water.
It is characterized by an intense green color, a mild taste with only slight bitterness, and a harmonious aroma.
2. Premium Matcha (Premium Grade)
Premium Matcha is often made from tea leaves harvested in the second or third flush. Although its quality is somewhat below that of ceremonial matcha, it is excellent for daily enjoyment.
This variety is particularly popular for matcha lattes or other matcha drinks. It has a fresh green color as well as a slightly bitter and subtly tart taste.
When selecting matcha, in addition to the quality level, color, aroma, taste, and origin should also be considered.
